OC Inspection - E&D Class 4 This inspection was conducted with employees on duty. A PDF copy of this inspection report was emailed to Adaberto C. at the time of this inspection. County legal action may result from this inspection. The following items must be corrected prior to final permit approval and re-inspection scheduled for 04/20/2022; 1. The maximum hot water temperature at all sinks in the kitchen was measured at 106°F. The minimum hot water temperature required is 110°F. Provide adequate hot water to all sinks in the kitchen. 2. The drain pipe for the three compartment sink is leaking onto the floor before reaching the floor sink. There is also duct tape and a sponge attached to this drain pipe. Repair all leaks in the three compartment sink drain pipe and remove the duct tape and sponge from the piping. 3. A filtered water line on a flexible hose has been added to the right side of the three compartment sink. This filtered water cannot be installed in the three compartment sink area and the flexible hose must be secured in a fixed position so that it cannot extend into any sink. The filtered water supply can be installed in the prep sink area as long as it is installed in a fixed position that prevents it from extending down into the sink. 4. The salsa in the salsa bar was measured at 52°F. There is also no floor sink for the melted ice to drain into. Provide a floor sink for the salsa bars to drain into or provide a refrigerated salsa bar that does not require a drain. TCS food items in the salsa bar must be maintained at 41°F or less. 5. There was a wooden bakery table in the back kitchen area being used to prepare raw meats. Wooden bakery tables are for the preparation of dough, bread or tortillas and must not be used for the preparation of raw meat. Discontinue the use of this table for the preparation of raw meat of any kind, even if it is in containers on top of the wood. 6. There is a grease buildup on the vent covers adjacent to the west side of the front cooking hood. Thoroughly clean the grease from these vent covers. 7. The tile on the cabinet base around the floor sink beneath the self-service soda station is rotting and falling apart. Remove and repair this loose and broken tile and provide a waterproof surface such as new ceramic tile or vinyl cove base to the surface of the cabinet base. 8. There is inadequate light inside the walk-in refrigerator. Replace the missing light inside the walk-in refrigerator. 9. Remove all duct tape from the drain pipes beneath the three compartment sink in the bar.
