PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. .....Cooked chicken, sausage and cut tomatoes piled high above the proper fill level in pans in the top of the salad make and pizza make cold tables at 47*F to 48*F internally. The lower portion of each item was holding properly cold. Manager stated pans had been re-filled within the last half hour and removed the TCS foods to the walk-in to recool. Please ensure cold-held TCS food is maintained 41*F or below.
