Inspection Comments

E&D, class 4 10+ Construction inspection was conducted with the superintendent, Brice and kitchen managers. Construction is at 20% completion. Scheduled for rough plumbing on 3/14/23 around 7AM. Reviewed finishes at walls, floor and countertop. Please address the following items prior to the final construction inspection: 1. Provide micro-switch operate air curtains at areas noted in the plans. 2. Provide a reduced pressure zone assembly (RPZ) (ASSE 1013) at the water connection point of the soda carbonator, reverse osmosis system, combi-oven, blender/glass rinser, misting system and any equipment with submerged inlet. Provide a drain cup for each RPZ. Drainpipe must be rigid and indirectly discharge to the nearest floor sink with minimum 1” air gap from the finished floor. 3. Conduits and fittings after the RPZ for soda carbonator and RO system must be stainless-steel or PEX. Do not use copper downstream from the RPZ of soda carbonator or RO system. 4. Provide a spill-resistant vacuum breaker (SRVB) (ASSE 1056) at 12” above the water connection point of each hose reel or hose bib. 5. Certify all testable backflow preventers and provide reports. 6. Provide a vented dual check valve (ASSE 1022) at the water connection point of each coffee/ tea brewer or any non-carbonated drink equipment. These are not testable devices, so replace them whenever they leak. 7. Provide an additional stub out at the mop sink for chemical dispenser. 8. Half of floor sinks must be exposed under large/ un-movable equipment for maintenance and monitoring. 9. Flash-off sides and top of large/ fixed equipment to adjacent walls, floor and ceiling. 10. Provide 3/8” radius metal cove base under the hood and around the outside of walk-in units. 11. Provide sample of floor finish prior to installation. The report was e-mailed to the superintendent and manager. No county legal action will result from this inspection. Please contact the Department at 602-506-6824 to schedule the next inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
