Permit update: Stopped by the site to check on the progress of the construction. Meet new GM, Eddie G. Construction is at 80% completion. Please address the following items before the equipment inspection on 1/11/24: 1. Provide 1” air gap for the drainpipes from 3-comp sink, food prep sink, dump sink, glass washer, dishwasher, jockey boxes, ice machine, drain/ drip trays, etc. 2. The owner would like to do AMC/ IPM for the establishment. In lieu of air curtains, the bar will be treated as an outdoor bar. Please review the attached outdoor food operation guidance document. Provide full pest control plan, full/ detail AMC plans, training, log sheets for cleaning, sanitation, pests notification procedure, contact lists for pest control, person in charge, etc. Please be advised that the IPM & AMC plans and logs must be implement, staffs must be trained prior to the final construction inspection. This program must be incorporated with your staff training program (who, what, when, where, and how). 3. Provide air curtain with micro-switch activate over the delivery door. 4. Provide additional power in your breaker box for future air curtains over the roll-up door and window if the IPM/ AMC program fails to prevent pests inside the facility. This program is a pest management program and not an allowance for pests inside the building. The establishment must go above and beyond to ensure the facility is pests free. 5. All cold/ hot holding equipment must be operable and functioning. 6. Detail clean interior and exterior of the equipment/ small wares before use. 7. Hand sinks must have soap and paper towels. 8. Food thermometer, sanitizer and its test strips must be provided before menu testing and training. No County legal action will result from this inspection. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
