Permit update: Conduct pre-final walk-through with manager, Teresa N. and chef, Eddie G. Construction is at 90% completion. The establishment can stock. Please address the following items prior to the final construction inspection can occur: 1. To date, IPM bait stations inside and outside had not been installed. Provide an updated IPM plan from a licensed pest control company. The facility must provide Active Managerial Control (AMC) documents: monitoring logs, policy, and procedure have not been provided from the facility’s management team. Provide door/ window activated air curtains over the roll-up door, delivery door and window. Dumpster is less than 10 feet away from the delivery door. Unless the IPM/ AMC is approved, air curtains are required over all roll up doors and windows or weld them shut. 2. Provide a reduced pressure zone (RPZ) assembly at the water connection point of the soda carbonator. Conduits and fittings after the RPZ must be stainless steel or PEX. Do not use copper or brass alloys downstream from the RPZ. Provide a drain cup for the device. Drainpipe must be rigid and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. Certify the device and provide report. 3. Provide another RPZ at the water connection point of the glass riners of the draft beer station. 4. Certify all testable backflow devices and provide reports. 5. Ensure hot water must be at 120*F and available at point of service within 45 seconds. 6. Route the drain line of the draft beer inside the beer walk-in unit to outside. Ensure pipe must be rigid, slope to drain and have 1” air gap from the finished grade. 7. All drainpipes from work sinks, ice bins, ice machines, soda guns’ holders, drip trays, dish washer, 3-comp sink, prep sink, dump sinks, etc. must be rigid and indirectly discharge to the nearest floor sink with minimum 1” air gap from the finished grade. 8. Finish painting the soffit over the stand mixer. Please use semi-gloss paint or better. 9. All equipment and small wares must be on site. 10. Hand sinks must have soap and paper towels. 11. Walk-up and drive-through windows must be self-closing. 12. Restrooms’ doors and exterior doors must be self-closing. 13. Provide rodent proof seal at all exterior pipe penetrations. 14. Provide escutcheon plates around all pipe’s penetrations. Please seal around them first. 15. Caulk and seal all gaps, cracks and penetrations that has the thickness of a business card. 16. Exterior doors must have door sweep and weather stripping. 17. Obtain all city’s finals reports and backflow reports. The report is auto-emailed to the owner and sent to manager and chef. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
