Inspection Comments

OC inspection for a Class 4 10+ E&D permit was conducted with owner Christian V. by appointment. Inspection rights were delivered via email. The facility was closed at time of inspection. The permit is not approved. Please address the following items prior to the OC re-inspection: 1) Lift the sprayer at the rinse sink to provide a 1" minimum air gap above the flood rim of the unit. 2) Ensure all drain lines at the ice machine are provided with 1" minimum air gaps above the floor sink. 3) Provide an ASSE 1013 reduced pressure backflow preventer upstream of the soda carbonator. Ensure no copper is downstream of the backflow. Certify and provide a test report. 4) Repair the leaking handwash sink drain at the back area of the kitchen. 5) Switch the hot and cold water at the three compartment sink faucets. The hot must be on the left. 6) Caulk-in the escutcheon plates and plumbing penetrations throughout the facility with silicone. 7) Rewrap the condenser lines in the walk-in cooler with new black foam. 8) Trim the foam sealant throughout the facility flush and provide a smooth layer of silicone. 9) Caulk the walk-in cooler penetrations with silicone. 10) Replace the acoustical perforated ceiling tiles in the kitchen and bar, as discussed. 11) Replace all missing cleanout covers throughout the facility. 12) Provide rubber cove base to the bar floor/wall and millwork/floor junctures. Caulk the base of the rubber base with silicone. The misting system must be maintained off until an ASSE 1013 RP backflow preventer is installed. At the OC re-inspection, ensure hot water measuring 120' F minimum is provided to the plumbing system and all refrigerators are on and measuring at 41' F or below. MCESD inspection report was delivered via email. No County legal action will result from this inspection.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
