Per person in charge (PIC), items were cooked longer than 4 hours prior to inspection. Grilled onions and cooked jalepenos were embargoed at time of inspection. Discussed hot holding with PIC. All TCS food held hot must be maintained at 135'F or above at all times.

Per person in charge (PIC), salsas were replaced less than two hours from the start of inspection. PIC put the containers of red and green salsa in the walk-in cooler to rapid cool and also replaced ice in cold holding unit of the salsa station at time of inspection. Discussed proper cold holding with the PIC. All TCS foods held cold must be held at 41*F or below at all times. Repeat violation.

PRIORITY VIOLATION-7-201.11, P: Separation-Storage - Observed two spray bottles - one holding sanitizer solution and the other with another surface cleaner on top of reach-in fridge on the line next to container of chicken. Person in charge moved chemicals to proper storage location at time of inspection. Chemicals must be stored away from food, utensils, and single-service items at all times to prevent contamination.

This establishment received a D Grade and had 3 Priority, 0 Priority Foundation violations on this inspection. A pattern of non-compliance is developing for Priority violation # [20], [3-501.16(A)(2) and (B)], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. Core-2-102.12(A), C: Certified Food Protection Manager Observed no Certified Food Manager (CFM) onsite at time of inspection. Person in charge was unable to produce a certified food protection manager certificate. A CFM is required to be on the premises during all hours of operations. Provide a CFM onsite by next routine inspection. Of Note: - On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
