Observed a berira beef sitting out at 67 Deg. F. and beef tamalies in the top portion of a prep cooler at 54 Deg. F. Per operator the berira beef was recently made and was cooling down and the tamales were in the unit for a couple of hours. Spoke to the operator regarding not over-filling prep cooler units and keeping food levels at least an inch from the tops of the pans and to place Time Temperature Control for Safety Food items in refrigerators when not in an active preparation process. Both items were placed in the walk-in at the time of inspection.
