PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed miso broth, pickled radishes, and noodles with a internal temperatures between 47 to 49*F. Observed refrigerator with an ambient temperature of 48 to 49*F. Per person in charge (PIC), all items had been in refrigerator for less than 4 hours. PIC moved whole raw eggs, miso broth, pickled radishes, and noodles from the non-working refrigerator to another refrigerator at time of inspection. PIC called a refrigerator repairman to come out an service the cooler at time of inspection and put a sign up to make sure the refrigerator is not used until it is repaired. Discussed proper cold holding with the PIC. All Time and temperature controlled foods for safety (TCS) must be held at 41*F or below at all times.
