For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling.>>>Observed breakfast packaged meals (cooked sausage, cooked potatoes, cooked onions, and cooked eggs) with an internal temperature of 65*F while employees applied the film over the top of the packs. The person in charge indicated that the foods were finished cooking as early as 0800 am (5 hours before inspection). The person in charge indicated they cool the bulk foods on sheet pans in the walk-in cooler prior to packaging. The person in charge placed the packages in the freezer to rapidly cool; 1 hour later (the 6 hour mark for cooling) the packages still had internal temperatures between 45*F - 52*F. The person in charge was informed that time/temperature controlled for safety foods must be cooled from 135*F to 70*F within 2 hours and from 70*F to 41*F within 4 hours (they cannot exceed 6 hours from 135*F to 41*F). The person in charge willingly discarded of the breakfast packaged meals above. Discussed with person in charge monitoring cooling in walk-in to ensure that time/temperature controlled for safety foods are cooling in an adequate amount of time. Discussed with person in charge cooling bulk food in freezer and not packaging foods until they are 41*F and below.
