Inspection Comments

OC re-inspection for a Class 3 10+ E&D permit was conducted with manager Aaron L. by appointment. The establishment was closed and not operating at time of inspection. The permit is still approved. Please address the following items prior to the next OC re-inspection: 1) Provide an additional handwash sink at the prep and make table area located next to the oven. The handwash sinks are not within 25 feet or easily visible from this area. 2) Provide a separate dedicated prep sink for all produce washing and protein thawing. Indirectly plumb the sink to a floor sink or installing a hub drain. Ensure a 1" minimum air gap is provided. 3) Provide an indirect connection for the three sink drain line by installing an open vent pipe that is provided with a 1" gap between the pipe and sink compartment basin. 4) Provide 1" minimum air gaps above the floor sinks for the soda fountain and beer tower overflow. Ensure rigid piping is utilized. 5) Repair the ventilation fans in the women's restroom. 6) Re-attach rubber cove base, as needed, and provide new metal cove base to the walk-in cooler interior. Caulk the base of the cove bases. 7) Re-caulk all sink fixtures and all fixed shelving units, as needed, with silicone. 8) Replace all torn refrigerator door gaskets, as needed. 9) Caulk-in all escutcheon plates and plumbing penetrations with silicone. Please be advised that the New Business Permit Application fee includes one initial inspection and one follow-up inspection. Additional fees will be assessed for any additional follow-up plan review inspections. MCESD inspection report was delivered via email. No County legal action will result from this inspection.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
