Advisory to check acidification of sushi rice before and after it is processed through the sushi roller. The pH did not rise after use of the roller. The pH meter was calibrated on 4.0 and 7.0 pH solutions to be accurate. The batch pH done by the manager earlier in the day was 4.01. All tests done at the time of the advisory were done in the same manner and using the same equipment. Test on the main batch done at the time of the advisory read pH 4.03. Tests on two batches of acidified rice that had been stored in the rolling machine and then rolled were 3.89 and 3.90. This is a drop in pH by between 0.11 and 0.14 after use of the roller.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
