Equipment
1) Cookline refrigeration near hand sink holding TCS items such as coleslaw with cabbage holding at 47*F. Have refrigerator repaired so it holds at 41*F or less. A refrigerator tech was on site during inspection.
2) Install an RPZ backflow preventer (ASSE 1013 such as a Watts 009) on water line to mister system.
3) Install an RPZ on all water lines to ovens on backside of cookline.
4) SVB backflow preventer on hose reel at smoker must be installed 12” higher than any downstream plumbing. Either relocate hose reel so that top of reel is 12” below SVB, or relocate SVB so it is 12” above hose reel.
5) Have all testable backflow preventers tested (RPZs, SVBs). Maintain certificates on site for inspection. Backflow must be tested yearly.
6) Install an ASSE 1022 on all water lines to coffee/tea brewers.
7) Install an ASSE 1022 on water line to biscuit steamer.
8) Have chemical company provide true unobstructed 1” air gaps in all chemical dispensers. Flex gaps are not approved. Also remove any unused chemical dispensers, such as one by walk-in cooler.
9) Plumb drains from keg relief in outdoor walk-in to floor sink (walk-in appears to drain to floor sink under slicer); draining into pans is not approved.
10) Repair leak at kitchen 3-compartment sink drain line.
11) Adjust drain lines at ice machines so that all drain lines have a minimum 1” air gap at floor sink.
12) Replace all missing/burnt out light bulbs. Replace light ballasts in walk-ins and outdoor storage as discussed/planned.
13) Ensure all lights are shielded or shatter-proof.
14) Install door sweeps on both exterior doors of outdoor storage area, so that no light is visible, to prevent entrance of pests.
15) Repair finishes in outdoor mop sink area. Recommend installing tile or stainless steel on sides of mop sink. Repair concrete basin so it is not worn down to aggregate and is smooth, non-absorbent, and easy to clean.
