All hand sinks in the establishment must have a supply of hot and cold water, hand soap, and hand drying provisions. Person in charge stocked all of the hand sinks with hand drying provisions.

Clean food contact surfaces must be clean to the sight and touch; harmful organisms may grow on food debris left of food contact surfaces after they are cleaned, and food debris may also attract pests. Person in charge indicated that they should be clean and had them re-washed, rinsed, and sanitized.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling.>>>Observed 2 containers of salad mix made with chopped leafy greens such as lettuce in the refrigerated drawers under the salad line; the internal temperature of the salad mixes ranged from 50*F - 54*F. The measured ambient temperature of the unit using a min/max thermometer was 50.1*F. Person in charge indicated that these salad mixes had been in the unit for 2 hours and they were moved back to the walk-in cooler to cool back down to 41*F. Cold holding units MUST maintain time/temperature controlled for safety food items at 41*F and below. Time/temperature controlled for safety foods CANNOT be stored in the refrigeration unit(s) stated above until the the inspector verifies that the unit is working . Re-inspection on or before 02/16/24.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
