Priority Foundation-8-103.12 (B), Pf: Conformance with Approved Procedures; HACCP records. >>> In walk-in refrigerator, observed two Reduced Oxygen Packages (ROP) of raw salmon held under refrigeration with a date mark of 2/7. Per Person in Charge, salmon portions are are used in the preparation of salmon cakes. Per establishment ROP procedures, fish must remain frozen before, during and after packaging. On sales floor, observed Reduced Oxygen Packages of commercially processed sausages, held under refrigeration, with a use by date more than 30 days from package date. Per establishment ROP procedure, items must be labeled with a use by date not exceeding 30 days. Reviewed establishment ROP procedures with Person in Charge (PIC). PIC discarded raw ROP salmon (see embargo form) and relabeled ROP sausages.
