Priority Foundation-8-103.12 (B), Pf: Conformance with Approved Procedures; HACCP records. >>> In refrigerated meat case, at service counter, observed various Reduced Oxygen Packages (ROP) of raw meats such as beef, pork and previously frozen breakfast sausages labeled with a use-by date exceeding 30 days. Per establishment ROP procedure, refrigerated packages must be properly labeled with a use-by date not to exceed 30 days. On sales floor, in upright two door freezers, observed various ROP packages with improper labels, such as omission the word 'immediately' in thawing instructions, omission of thawing instructions and spelling errors. Per establishment ROP procedure, frozen product labels must have safe handling instructions and state “Keep frozen until use, thaw under refrigeration immediately before use”. Reviewed establishment ROP procedures with Person in Charge. Ensure all ROP products are properly labeled.
