SALT (Sea and Land Tacos) Plumbing inspection was conducted by appointment. Conducted walk-through without superintendent. Noted construction is at 25% completion. Underground plumbing had been completed. Trenches had been backfilled. Construction is at framing stage. Please address the following items prior to the next inspection: 1. Provide 3 tankless water heaters to meet the demand of the hot water inside the facility. Please see attached hot water calculation sheet. 2. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the reverse osmosis system, Glycol chiller, the EVAP cooler, soda carbonator, and mister system. Provide a drain cup for each vent port of the backflow preventer. 3. Provide PEX and/ or stainless-steel downstream from the backflow preventers RO system and soda carbonator system. 4. Provide a spill resistant vacuum breaker (SRVB) 12 inches above the water connection point of the sprayer hose in the brewery. 5. Provide vented dual check valve backflow preventer (ASSE 1022) at the water connection point of the tea brewer. 6. Provide an additional water stub out at the mop sink for chemical dispenser. 7. Provide air curtain at the delivery door of the kitchen. 8. Dock seal around roll up door of the brewery area. 9. Provide3/8” radius metal cove base at walls and floor junctures under the hood and around the outside of the walk-in cooler. 10. Extend the stainless-steel wall panel under the hood to the edge of the hood. 11. Per plan, laminated countertop and cabinets at bar. Laminate material is not acceptable for countertop and cabinets surfaces in wet areas. Please change order to solid counter and surface material for shelving and base in the bar. 12. Provide 3/8” radius cove base inside kitchen, restrooms, behind bar, in dry storage and brewery. 13. Provide door sweeps and weather stripping at all exterior doors. 14. Provide self-closer or self-closing hinges on restrooms’ and exterior doors. 15. If the establishment has glass rinser at the bar, the water connection for each glass rinser will need a RPZ for each. No county legal action will result from this inspection. Report is auto-email to the owner and sent to superintendent. Please contact the Department at 602-506-6824 to schedule the next inspection. Priority violation is a major violation that directly contributes to increasing the risk of foodborne illness or injury.
e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
