E&D, class 4 10+ Plumbing inspection was conducted with the superintendent, Walter H. Construction is at 60% completion. Please address the following items prior to the next inspection: S.A.L.T 1. Provide an additional water stub-out at the mop sink for chemical dispenser. 2. Provide solid countertop at the pass-through shelving. 3. Provide several coats of semi-gloss paint on the substrate of the countertop. 4. Seal gaps at die wall and countertop junctures. 5. Smooth-out hard edges at floor tiles and floor sinks. 6. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the soda carbonator. Conduits and fittings after the RPZ must be PEX or stainless steel. Do not use copper or brass alloy downstream from the RPZ of the soda carbonator. 7. Provide another RPZ at the water connection point of the mister system. 8. Provide a vented dual check valve backflow preventer at the water connection point of any non-carbonated drink equipment. 9. Provide drain cup for each backflow preventer with vent port. 10. Drainpipes must be rigid and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. 11. Certify all testable backflow preventer and provide reports. Catalyst Bar (Please submit new application for the Brewery/ bar service since they are operated by different owners). 12. Provide a mop sink for the Catalyst work zone. 13. Provide 3-comp sink for Catalyst Bar. Sink must have hot and cold water and indirectly discharge to a floor sink with minimum 1” air gap from the finished floor. 14. Provide a hand sink inside the brewing room. 15. Provide plastic strip curtain over the roll up door. Strip curtain must cover the entire width of the opening and reach the floor. 16. Provide 3/8” radius metal cove base outside of the walk-in units. 17. Seal around the beer chase penetrations, fire sprinkler heads, condensation, conduits, light fixtures inside the walk-in unit. 18. Provide an assigned area for the kitchen inside the walk-in unit. 19. Use epoxy grout on floor tiles in area. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
