S.A.L.T.__ E&D, class 4 10+ This inspection was scheduled with the GC on last visit. Equipment has not been installed. Flooring is being installed at the time of inspection. Manager and person in charge must be a certified food protection manager and must be at the site during all operational hours. Food handlers must have food handler certificates. All licenses, permits, managers, and food handlers’ certificates must be maintained on site for inspection purpose. Licenses and permits must be posted in an inconspicuous area. Please address the following items prior to the next inspection: 1. Provide a reduced pressure zone (RPZ) assembly (ASSE 1013) at the water connection point of the mister system. Provide a drain cup for the vent port of the RPZ. 2. Provide a spill resistant vacuum breaker (SRVB) (ASSE 1056) 12 inches above the water connection point of any sprayer hose. 3. Certify all testable backflow preventers and provide reports. 4. Provide chemical dispensers with internal built-in air gap (ASSE 1055A) if they will be used. 5. Drainpipes must be rigid. Drainpipes from 3-comp sink, equipment, backflow preventer, glass rinser, work / dump sink, walk-in units, etc. must be rigid, slope to drain at ¼” per foot and indirectly discharge to a floor sink or floor trough. Direct connection for these fixtures are not acceptable. 6. All sinks must have hot and cold water and available at point of service within 45 seconds. 7. Provide 3/8” radius cove base inside restrooms. Noted restrooms do not have the required cove base. Straight base is not acceptable. 8. Provide 3/8” radius metal cove base outside of the walk-in cooler. 9. Provide ¼” radius coving inside the walk-in cooler. 10. Provide several coats of marine grade sealant on the concrete floor inside the walk-in unit. Water must bead up on the floor. 11. Grout must be flushed with the same level of the floor tiles. Please use siliconized grout for flooring inside kitchen. This includes storage areas. 12. Provide transitional strip between different floor levels. Priority violation is a major violation that directly contributes to increasing the risk of foodborne illness or injury.
e.g. - Food employees do not properly wash hands when required
Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
