PIC voluntarily discarded all items at time of inspection (see embargo). Food items must be unadulterated and honestly presented to prevent contamination.

PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Discussed that chlorine sanitizer concentration should be maintained between 50-100ppm and verified with a chemical test strip. The manager added additional chlorine to the solution and re-measured at 50ppm. Discussed re-sanitizing any dishes that had recently been washed.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ------ In the reach in cooler next to the wok, observed an ambient air temperature of 48*F when measured with a min/max thermometer. Observed a large ice block formed on the underside of the cooler. Inside the cooler, observed TCS foods with internal temperatures ranging from 46-50*F when measured with a probe thermometer, including: RTE pastrami, chicken, pork, rice noodles, potato salad and cooked rice. Except during preparation, cooking, cooling, or when time is used as a control all TCS foods are to be maintained at 41°F or less. PIC stated the foods had been in the cooler longer than 4 hours and voluntarily discarded the out-of-temperature foods at the time of inspection (see embargo). Advised PIC to manually defrost the cooler once emptied of all non-TCS foods and verify holding temperature before replacing TCS foods. Advised PIC to store TCS foods in the adjacent prep cooler until repairs are completed.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
