PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.......Salsa, mascarpone and southwest sauce made of salsa and house-made ranch in containers in a pan of shallow ice water, under temperature control per manager, at 45*F to 51*F internally. Manager stated they had been held as such for about four hours. Embargoed, manager discarded. Reviewed temperature/time control with manager. Please ensure TCS food is held 41*F or below, or under time control with proper discard. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
