PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding......Pans of liquid eggs at 47*F internally holding over ice baths at the cook line and container of mascarpone labeled for refrigeration in an ice bath at the expo station at 50*F internally, under temperature control per the manager. Items had been out less than one hour and were returned to coolers to rechill to 41*F or below. Manager then had fresh items out under time control with proper discard. Reviewed temperature/time requirements with the manager. Please ensure TCS food is maintained in proper temperature or under time control with proper discard. Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment.............The manager stated the walk-in had just been noted as not holding properly and had a service repair arranged and on its way. The walk-in was at 50*F on the min/max thermometer. The unit had been verified it was holding properly cold less than 1.5 hours before and the manager was in the process of moving all TCS food to other cold holding equipment. Please repair the walk-in to hold TCS food 41*F or below prior to reinspection tomorrow, 2/14/24. No County legal action will result from this inspection. Emailed report to Cole. A pattern of non-compliance is developing for Priority violations #6 and 20, [code reference: 2-301.14 and 3-501.16(A)(2) and (B)], which has been noted during this inspection. An Active Managerial Control Intervention Visit was offered to the person in charge. Failure to correct repeat violations may result in legal action. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
