Observed boba in hot holding unit measuring to 110*F per probe thermometer. Per PIC, boba was put in unit about 3 hours prior to inspection time. PIC stated unit was not able to turn up an hotter. Discussed that boba is a TCS item and if hot holding, must be kept at 135*F and above. Discussed opportunity to cold hold boba or use time as a control pending written policy. PIC provided a time stamp to current batch of boba at time of inspection and discussed need to throw out batch within the hour as it would reach the maximum 4 hours. PIC stated establishment will cold hold all future batches of boba at time of inspection. Discussed cooling process and requirements with PIC.

Prior to next routine inspection... 1)Provide the missing cleanout covers throughout the facility, as needed. 2)Increase the lighting in the walk-in cooler with a bright LED light. 3)Discontinue the use of the strainer at the three compartment sink floor sink. 4) Repaint the wooden shelving at front with food grade paint. Of note: Provided time as a control guidance doc via email if establishment wishes to use time as a control pending written policy. New Owner Packet provided via email. Notice of Inspection Rights signed by owner Nhu T. Report emailed. No County legal action will result from this inspection.
