Final Construction for the Outdoor Food Operation was conducted and store was approved. Inspection notes under the remodel are stated below. Remodel application has been closed out. At time of inspection, the outdoor food operation area and support kitchen were properly set up and approved. This establishment has demonstrated sufficient compliance to proceed with the approval for an outdoor food operation. The outdoor food operation condition will be attached to your Eating & Drinking permit as a notice, so that future inspections will be conducted for the outdoor food operation area as well. When conducting approved outdoor grilling/smoking/cooking menu items the operation is restricted to the following criteria: 1) Limited to the cooking/grilling of proteins. Food preparation of proteins and food items for service shall be done indoors. 2) Hot holding and cold holding outdoors is limited to approved menu items by approved methods. 3) No cutting, portioning or other preparation is allowed outdoors and shall be done inside the support kitchen. 4) The outdoor food operation area is a limited extension of your support kitchen outside, and the same regulations that apply indoors are applicable at the outdoor cooking area. Follow the same regulations for health code compliance outdoors that are you are required to follow indoors. 5). Outdoor cooking is only allowed in good weather conditions and when contamination of food cannot take place. If for some reason the safety of the food is at risk the operations needs to cease immediately. Outdoor cooking setup (i.e. Equipment used, equipment locations) is binding and may not be modified without prior Department approval. Contact your inspector for suggestions or changes. Hand sink has to be operational and stocked with soap and paper towels during operation. No County legal action will result from this inspection. E-mailed to owners.

Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
