Portable hand sink was not operational at out door cooking area of establishment. Sink was hooked up and made operational at time of inspection. Advised person in charge that the out door cook area must have hand sink for handwashing available for staff. Priority Foundation-6-301.11, Pf: Handwashing Cleanser, Availability. Observed no hand soap at sink for cook staff to wash hands. Soap was brought to sink for easy handwashing. Hand sinks must always have soap and hand drying devices available for staff to wash hands. Advised person in charge to have shift leads monitor for usage.

Observed pico de gallo at salsa bar at 45*F. The ice bath was made deeper and pico de gallo was placed in smaller containers and cooled to 41*F. Cold hold of food to be 41*F or lower.

This establishment is not participating in the award program at this time and had 1 Priority, 2 Priority Foundation and 1 Core Violations on this inspection. No County legal action will result from this inspection. Verbally discussed Notice of Inspection Rights with Alma P. Emailed copy of inspection report to facility. Emailed copy of 72 hour notice with inspection. Discussed correct date marking of temperature control for safety in the refrigerator. Items such as diced pico de gallo, diced or sliced tomatoes, and any cooked and cooled meats must be marked with a made on date or discard date. Establishment has been open for less than 15 days, owner is in the process of scheduling training for the certified food handler certificate. Provided listing of companies that provide certified food protection manager training. Provided guidance for developing a written procedure for clean up and kit for bodily fluid incidents.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
