Cutting board and knife stored in the hand washing sink. Spoke with with PIC and items were removed. Ensure hand washing sinks are not storing items and are always readily available for proper hand washing procedures.

Proper cold holding temperatures
PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Salsas, shredded cabbage, cooked peppers and onions, diced tomatoes, and pico de gallo with internal temperatures between 42 degrees F and 67 degrees F cold holding in a containers with ice on a salsa bar in the dining area. Spoke with PIC and the items were placed into the unit at 10:30am (30 minutes prior to inspectors arrival.) More ice was added to the containers to bring the temperature back down to 41 degrees F for quality of the ingredients. Recommended moving the unit to a time as control policy. Handouts were provided for time as a control. Unit was placed on time as a control policy from 10:30am to 2:30pm. Any leftover TCS items will be discarded after 2:30pm.

Core-6-501.14, C: Cleaning Ventilation Systems, Nuisance and Discharge Prohibition. Observed grease drips on the ventilation hood and on the tiles below the hood. PIC stated the unit was serviced in January. Recommended cleaning and service the hood to ensure it is working properly.

No County legal action will result from this inspection. Inspection rights reviewed with Giovanni L. Inspection report emailed. Inspected with Spanish Liaison RS#1479. Discussed date marking, food storage containers, and cold holding. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees. We need a current and accurate email address on file to ensure you receive a copy of your permit card and invoice(s) upon renewal. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
