Inspection Comments

New permit inspection for the Congo Concessions. Walk through conducted. Establishment is open and operating. The following items were identified for follow up: 1). Two soda backflow valves will require re-testing. Please provide report at time of re-inspection. 2). Provide split escutcheon plates at water and waste water lines where missing. Hand sink back wall. 3). Hand sink faucets are leaking, both in place hand sinks. Please repair. 4). Provide hot water (100 degrees) at back wall hand wash sink within 45 seconds. 5). Provide light shield where missing, two location sin kitchen. 6). Some of the lights are out in the kitchen, replace bulbs and provide sufficient light. 50 foot candles at food prep areas. 7). Roll up the blue drain line on ice machine filters and hang on the filters. 8). Clean the floor sinks - throughout. 9). Repair the wall at the ice scoop and shelve between sinks. Ideally you finish out the shelve and wall with a more durable material. 10). Clean the AC returns in the area of the pizza prep. 11). Provide sufficient space for air drying of dishes. 12). Close off the hole in the wall around the plumbing under the three compartment sink. 13). Install cleanout covers where missing, between coolers, in the floor, at hand sink. 14). Repair three compartment sink faucet, flow, gaskets. 15). Re-install the hand wash sink at the three compartment sink. 16). Re-silicone the soda stations in the front counter. 17). Provide a dedicated water line at the mop sink for chemical dispensers. Make sure the dispenser has an internal air gap. 18). Grout the entrance of the of the freezer and cooler to the tiles. 19). In the restroom caulk the hand wash sink and the toilet at the wall/ floor junctures. 20). In the walk-in seal the roof penetration around the refrigeration line. 21). In the walk-ins - install brighter light bulbs in all 4 fixtures. 22). Extend the condensate drain lines and clear the concrete pad. Ideally run down and then over. Water may not pool in the landscaping. Create a dry well if needed. (1 X 1X 2 feet deep with rocks). This establishment/operation has been evaluated and qualifies for the issuance of the permit. To complete the permitting process, meaning issuance of this permit, and begin operation, the applicant must first submit payment of the annual operating permit fee to the Department’s Administrative Services. Note that fees paid up to this inspection approval did not include the annual operating permit fee. PAYMENT with a credit/debit card can be made via phone at 602-506-6824, Option 2. Per MCEHC Chapter I, Regs 4 & 5, no person shall conduct an operation or operate an establishment for which a permit is required without holding the necessary and valid permit to do so. No operating permit is valid, until the permit fee is received by the Department. It is also the responsibility of the permit holder/owner to notify MCESD if there are contact/ billing address changes. Note that laminate countertops are no longer approved. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
