New permit re-inspection for the Congo Concessions. At time of inspection almost all items have been corrected. Please continue with: 1). Provide split escutcheon plates at water and waste water lines where missing. Hand sink back wall. Caulk can work too as long as it is smooth and cleanable. 2). Finish out the foam in the wall around the plumbing under the three compartment sink. Area should be cleanable. 3). Re-install the hand wash sink at the three compartment sink. Sink is installed and water lines are being plumbed in today. 4). Dedicated water line is being installed at the mop sink for chemical dispensers. Hole in the wall was already cut. After completion please restore wall to match existing. 5). In the walk-in seal the roof penetration around the refrigeration line. Note that laminate countertops are no longer approved. Counters will need to be replaced when planned remodel occurs. No County legal action will result from this inspection. Printed in site and e-mailed.

e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
