Time as a public health control: procedures & record
Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. On rack across from pizza oven, observed cooked pizzas available by the slice and wagon wheels made with meats and cheeses stored at room temperature without time stamps. Per employee, Time as Control is used for pizza slices and wagon wheels. No Time as Control Procedure available for review at time of inspection. When utilizing 4 hours and no temperature control written procedures must be prepared in advance of utilizing method and the food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS (time/temperature controlled for safety) food was removed from temperature control. Discussed importance of proper Time as Control Procedure with Person in Charge (PIC). Pizzas and wagon wheels were time stamped at time of inspection. Provide a written Time as Control Procedure before Re-Inspection within 10 days.
