Menu items that may be served raw or undercooked animal foods must have disclosure by either describing the product as being raw or undercooked (i.e. raw oysters, burgers cooked to order) or by utilizing an asterisk directing them to a footnote that describes the item as being served raw or undercooked. Priority Foundation-3-502.11, Pf: Variance Requirement. >>> In walk-in refrigerator and in refrigerated make table on cookline, observed raw beef in Reduced Oxygen Packaging (ROP). Per Person in Charge (PIC), ROP was produced on-site at establishment on 6/25. A variance is required before packaging TCS (time/temperature for safety) food using a reduced oxygen packaging method and holding for more than 48 hours. Discussed 48-hour rule with PIC and provided variance guidance documents for ROP. Discontinue use of ROP for more than 48 hours at establishment unless a variance is obtained. PIC opened ROP raw beef at time of inspection. Establishment has proper signage, pet friendly cleaning supplies, waste receptacle and single-service dog bowls. No County legal action will result from this inspection. Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
