Inspection Comments

OC Inspection. Walked with owners. Establishment not operating at this time, but is approved to stock and train. Correct the following items for permit approval: 1) Install approved wall materials including wall covering in prep area behind oven. Use stainless steel, tile, FRP, or similar. If other prep equipment such as mixers will also be against this wall, extend durable wall covering to these areas. 2) Clean and repair 3-door refrigerator in prep area, so that water does not accumulate in bottom. 3) Detail clean establishment. 4) Remove any unnecessary items, and organize items to be kept. 5) Replace any burnt out or missing lights. Also provide light to corner storage area in ware washing room. 6) Remove brick supports for ice machine, jockey box. Use an approved material that is smooth, non-absorbent, and easy to clean. 7) Fix/cover hole in wall under 3-compartment sink. 8) Trim foam under 3-compartment sink, and seal with silicone or paint so it is smooth and non-absorbent. 9) Replace clean out cover where missing in women’s restroom. 10) Re-seal restroom counters to walls with caulk or silicone. 11) Provide a stainless steel table or similar for base to smaller mixer. 12) Repaint ceilings in prep area and restrooms a lighter color. Discussed Dog Friendly Patio - requirements will be emailed with report. Provide approved signage for both doors, and a pet friendly chemical for cleaning pet accidents. The sign shall state: "Dog Friendly Patio - Dog Access Only through Outdoor Patio. For violations, contact MCESD (602) 506-6616." No County legal action will result from this inspection. Priority foundation violation is a minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation.
e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
