Priority Foundation-5-205.11, Pf: Using a Handwashing Sink-Operation and Maintenance. Upon inspection, the only hand wash sink had dead cockroaches in the basin of the sink. The hand wash sink shall remain free of all obstructions and pest. Person in charge removed cockroaches. Observed dread cockroach between the cutting board and lid at food prep table across from 3 compartment sink. All surfaces and utensils shall be kept clean and free of pest (live or dead), old food particles and grease. Correct prior to re-inspection. Priority Foundation-6-501.111 (C), Pf: Controlling Pests; Approved Trapping Methods/Existence. Observed live cockroaches of all life cycle throughout mobile food unit. Person in charge provided pest control service receipt dated March 2019. Per person in charge they have been receiving service every week for roached, person in charge could not provide proof of service. Cockroaches shall be eliminated from mobile food truck by a professional pest applicator, and owner/person in charge shall provide receipts of service prior to re-inspection

Core-6-501.12, C: Cleaning, Frequency and Restrictions. Upon inspection, throughout the food truck, excess grease and old dry food particles were observed. Per person in charge, the truck is cleaned after every food service. Food truck shall be clean to sight and touch.

Core-4-204.11, C: Ventilation Hood Systems, Drip Prevention. The drip cup was filled with grease/oil and spilling over the side of cup. Clean/ discard excess oil in order for proper funneling of grease/oil. Correct prior to next routine inspection.

This establishment received a D Grade and had 0 Priority, 5 Priority Foundation and 2 Core violations on this inspection. Upon inspection, person in charge had to unplug and plug in different electrical cords multiple times in order for equipment to function. Supply a generator and/or enough electrical cords so that all equipment can be plugged in at the same time. Renewal was not approved. Re-inspection must occur to correct necessary items in order for renewal of permit. Due to the violations noted on this inspection report, County legal action may result from this inspection.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
