Raw shell eggs stored on top shelf in lower compartment of refrigerated prep table over ready-to-eat foods. Raw shell egg shall not be stored directly above ready-to-eat foods in order to prevent cross-contamination. Rearranged items to correct. 2. There was a partially opened bag of beef dripping liquid on and being directly stored on top of raw shell eggs. Beef and eggs were voluntarily discarded by employee. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. Observed the following time-and-temperature control for safety (TCS) foods with an internal temperature between 50 and 88 degrees Fahrenheit: sliced cheddar cheese, shredded mozzarella cheese, raw shell eggs, sour cream, uncooked beef, uncooked pork chorizo, sliced ham, cheese sauce, bacon and tamales. TCS foods intended to be kept cold shall be kept at 41 degrees Fahrenheit or lower. Amount of time foods had been in refrigerator could not be determined. Operator voluntarily discarded items at time of inspection.

The only mechanical refrigerator in the establishment had ambient temperatures between 67 degrees Fahrenheit and 47 degrees Fahrenheit. Equipment was unable to maintain an ambient temperature below 40 degrees Fahrenheit. Employee stated that the refrigerator was packed too full. When embargoed items were removed, the refrigerator was able to properly meet temperature requirement.

Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control. Verification Visit inspections found in compliance with Cutting Edge program requirements receive an “A” grade.
