The unit was in operation at time of observation. The operator was instructed to cease operation so as to avoid further production of waste water. All sewage must be fully contained until it is discharged at the approved commissary.

The unit had a hose running from the adjacent building to the unit's fresh water inlet at time of inspection. Operator was instructed to disconnect said hose immediately. A mobile food establishment cannot be continuously connected to a fixed water source. Core-5-302.16 (B-E), C: Plumbing installed; proper backflow devices; Hose, Construction and Identification (durable, smooth, identified) The hose feeding water from the adjacent building to the fresh water inlet was not constructed of an approved material. The hose was immediately disconnected by the operator. All hoses used for the purposes of fresh water must be food grade.
