Advised PIC that the rinse device shall be placed outside of the three compartment sink to prevent cross-contamination due to backflow. Advised PIC that rinsing device needed an Atmospheric Vacuum Breaker (AVB) attached if they want to use this device. PIC disconnected the rinse device at time of inspection. Core-5-205.15 (B), C: System Maintained in Good Repair; Maintained >>>Observed a ribbed flexible hose being used for wastewater. Advised Person in Charge (PIC) that plumbing systems or hoses shall be maintained and in good repair. PIC will be replacing this hose with PVC pipe or an approved pipe/hose with equal or better quality during their remodel.

This establishment received a(n) A Grade and had 0 Priority, 0 Priority Foundation and 3 Core violations on this inspection. No County legal action will result from this inspection. Approved to sell or giveaway produce, nuts, and pre-packaged, individually wrapped, properly labeled food items from approved source only. Frozen foods must be maintained frozen and sold to the consumer frozen. This Mobile Food Type II unit is limited to assemble-serve, heat-serve, and or hold-serve of commercially processed food/beverage items. No raw animal food shall be prepared for service from the unit. Mobile Food Type II and III units shall operate from a commissary or other fixed food service establishment and shall report at least daily to such location for all supplies and for cleaning and service operations. Mobile Food Type I-III establishments shall at all times remain vehicle mounted and readily movable. No permanent utility connections are permitted. e.g.- Hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required)
Core violation is a minor violation that relates to general maintenance and sanitation.
e.g. -No sign reminding employees to wash hands
Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
