Keep the hand wash station free of any items, and limited to hand washing only. Tray of tortillas was moved to correct. Priority Foundation-6-301.12, Pf: Hand Drying Provision. There was no paper towels available at the start of hand washing event. Always have paper towels available to properly dry hands. Paper towels were provided from the cab.

PRIORITY VIOLATION-3-501.16(A)(1), P: Time/Temperature Control for Safety Food, Hot Holding. The following items were out of temperature for hot holding in the steam table. Rice @ 106df, refried beans @ 106df, and whole pinto beans @ 97df. PIC informed me that all the items were cooked at 7am. Must maintain at 135df or above. The heat source on that side of the steam table was not lit. PIC lit the heat source. The aforementioned foods that were on that side were embargoed and removed from service by the PIC.

PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. The following foods were out of temperature for cold holding in a small household refrigerator. Cheese @50df, Raw shelled eggs @ 51df, Raw marinated pork @ 45, raw beef @45df, and ham cold cuts @47 df. PIC informed me that all these foods were put in there at 6am. Must maintain at 41df or below. These items were embargoed and the PIC removed them from service.

Small house hold refrigerator was only able to achieve 50df. Must be able to hold food at 41df or below. Remove non-commercial refrigerator from the mobile food unit. All equipment must be commercial. Small household refrigerator was condemned and its removal will be verified at re-inspection.
