Observed several cartons of liquid eggs and single service containers of sauces containing dairy in the prep refrigerator at 68*F. Operator stated that items had been out of temperature for about 2 hours since they had set up and started operating. TCS food must be maintained at 41*F or lower. Had operator move TCS items to alternative refrigerator that was holding at 38*F.

~MCEHC Chap. 8, Sec. 3, Reg. 5b; Mobile food establishment is not reporting daily to an approved commissary for supplies, food storage, vehicle, and equipment cleaning, waste disposal and service operations. Owner stated that waste water disposal and obtaining of fresh water takes place at unpermitted fixed establishment in addition to the commissary with whom they have an agreement. Water must be obtained and properly disposed of only at the location noted on valid Commissary Agreement. Spoke with owner about only using permitted commissary with whom they have an agreement as the location of their waste water disposal and source of fresh water. ~MCEHC Chap. 8, Sec. 3, Reg. 5e; Mobile food establishment has not maintained a commissary visits log. Operator could not provide Commissary Visits Log when requested. Commissary Visits Log must be current and maintained on the mobile food unit at all times while operating. Provided blank copies of Commissary Visits Log to operator via email.

Verification Visits are inspections of establishments enrolled in the MCESD Cutting Edge Program, which requires an enhanced food safety program and ongoing demonstration of active managerial control.
