Person in charge informed me that all the food handlers washed their hands in the bathroom prior to working with food. You are required to use the designated hand wash station on the cart. The person in charge was instructed and educated.

Hand wash station was disassembled at the start of the inspection. Always have the hand wash station functioning correctly and assembled as it was when it passed initial permitting. The hand wash station was re-assembled and demonstrated to work correctly during the inspection. Priority Foundation-6-301.11, Pf: Handwashing Cleanser, Availability. ~MCEHC Chap. 8, Sec. 3, Reg 1(a)(3); Mobile Food Type II is not operating as classified. Observed employee rolling dough on site on a table. The food processes that were submitted indicated that the dough would be pre-rolled at the commissary and stored in proof boxes. You are not allowed to roll dough on site with a type 2 permit. I educated the person in charge. ~MCEHC Chap. 8, Sec. 3, Reg. 5e; Mobile food establishment has not maintained a commissary visits log. Person in charge could not provide a commissary visits log. Always have visits logs available for the inspector during operation. Person in charge was educated.
