Discussed with PIC that cold holding equipment for all TCS food must have a capacity of 41df or below. PIC stated he will repair.

Core-6-501.111 (A-B, D), C: Controlling Pests; Monitoring --Observed rodent feces throughout entire food unit including on top of steam table and underneath the 3-comp sink, flattop grill, driver area, and outside water heater. Discussed with person-in-charge that premise shall be maintained free of insects, rodents and pests. PIC stated that food unit has not been used and parked near golf course, which could have attracted the pests. PIC will remove all rodent feces, provide deep cleaning, and fumigate.
