Observed shredded mozzarella cheese with an internal temperature of 56°F in the upright fridge by the truck entrance. Person in charge had stated that they had purchased the cheese right before inspection. Discussed that all TCS food to be maintained at 41°F or less. Person in charge had placed the cheese on ice for rapid cooling. Training shall occur to verify that employees are aware on proper cold holding procedures.
