Cooked rice held at 129-130 degree F for about 2 hours in steam unit. Water in steam unit is at 130 degree F. Manager was advisie to make sure water temperature is much higher to be able to hold cooked food at 135 F or more.

Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one (1) Certified Food Protection Manager (CFPM) on staff.
