3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ====> Observed deli sliced turkey and cut lettuce cold holding in the reach-in refrigerator with an internal temperature of 49-51F, probe thermometer, verified by person in charge (PIC). According to PIC, the turkey and lettuce has been stored in the refrigerator for about an hour. The turkey and lettuce was placed into the employee refrigerator to cool down to 41F, see violation #31. Discussed regularly taking temperatures of food in the refrigerator and catered food when it is delivered to ensure that TCS food is not held in the danger zone (41F-135F). Priority Foundation-4-301.11, Pf: Cooling, Heating, and Holding Capacities-Equipment. ====> Observed an ambient air temperature of 46.7F, min/max thermometer, in the reach-in refrigerator. The min/max thermometer was left inside of the refrigerator for over 30 minutes during the inspection. PIC will contact maintenance to service the refrigerator. It must maintain TCS food at 41F or below.
