Addl Notes: Observed containers of ready to eat/time temperature control for safety (TCS) foods in the walk in with no lids or wrapping cover. Explained to PIC that due to the dried food debris on the racks that it is important to cover the items with a corresponding lid or saran wrap/aluminum foil to prevent possible contamination of the cooked RTE/TCS foods. Please add lids or covers to the TCS foods when not in use and in walk-in. Corrective Action: Correct prior to next routine inspection.

Addl Notes: Observed both deli slicers in the kitchen area with dried food residue at time of inspection. Person in charge (PIC) could not verify at what time the deli slicers were last properly washed, rinsed, and sanitized. Explained to PIC that all food-contact surfaces must be cleaned to sight and touch. All food-contact surfaces that contact TCS foods must be cleaned every 4 hours by washing, rinsing, and sanitizing. Food-contact surfaces sanitized using chlorine sanitizer must be sanitized with a contact time of least 10 seconds. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

3-501.19 (A1, B2, C2-3) - Priority Foundation: Time as a Public Health Control; Documentation. Addl Notes: Observed chicharron with internal temperature of 98*F and beef ribs with an internal temperature of 102*F in the hot holding display case via probe thermometer at time of inspection. PIC states the items were placed at 2PM and they are part of their time as a control policy. Items do not last over 4 hours in the hot holding unit. No time stamps were available and explained to PIC that every time freshly cooked or reheated product is introduced into the hot holding unit under the time as a control policy, a time stamp must indicate when it was placed; whether on paper, sticker, notebook, etc. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection. ***2nd Consecutive Violation***

3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed wiping cloth bucket used in the cooking section of the carniceria with 0PPM of chlorine sanitizer. Explained to PIC that all wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

4-602.13 - Core: Nonfood Contact Surfaces Addl Notes: Observed severe accumulation of dried food debris on racks inside of the walk in where cooked foods are stored. Explained to PIC that nonfood-contact surfaces shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Nonfood-contact surfaces shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Please remove all debris from racks inside of the walk in prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

6-501.12 - Core: Cleaning, Frequency and Restrictions Addl Notes: Observed inside of walk-in and cooking prep area with excessive amounts of food debris at time of inspection. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Please develop a schedule to routinely clean and eliminate all food debris on floors, walls, walk-in/storage areas. Corrective Action: Correct prior to next routine inspection.

"A" for Food Safety
Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.
How does it work?
The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.
How can I determine the grade?
The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.
Definitions
- Priority Violation
- Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
- Priority Foundation Violation
- Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
- Core Violation
- Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
- Cutting Edge Program
- All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
