Addl Notes: Observed food contact surfaces in the sanitizer compartment of the three-comp with a 25ppm chlorine concentration. Informed PIC that the sanitizer concentration is too low; the proper concentration is 50-100ppm. Instructed PIC to fill the compartment with the proper sanitizer level and re-sanitize the food contact surfaces at time of inspection. PIC filled the compartment with a chlorine concentration between 50-100ppm and re-sanitized the dishes at time of inspection. Discussed the importance of monitoring the sanitizer levels with PIC. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Food-contact surfaces were properly sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed wet wiping cloths stored in sanitizer buckets with below 25ppm chlorine concentration. Informed PIC that wiping cloths must be stored in an approved sanitizer concentration. PIC placed the wiping cloths in an approved sanitizer concentration at time of inspection. Discussed the importance of testing the sanitizer concentration with PIC. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Comments:

4-501.11 - Core: Good Repair and Proper Adjustment-Equipment Addl Notes: Observed the gaskets of the reach in fridge nearest the cold holding unit to be in disrepair. Informed PIC that the gaskets need to be replaced. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

4-101.11 (B-E) - Core: Characteristics- Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable Addl Notes: Observed the scoop used for the raw chicken on the bottom right-hand side of the cold holding unit to be chipped on the side and with many small, dented areas. Informed PIC that this scoop needs to be replaced so that it is smooth and easily cleanable. Observed an unsealed, wooden plank being used above the flat top grill for the microwave with food debris in/on it. Explained to PIC that unsealed wood is not permitted to be used in the kitchen due to its porous, absorbent, and non-easily cleanable properties. Remove or replace the wood with a smooth and easily cleanable surface prior to next routine inspection. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. Description: Physical Facilities Installed, Maintained, and Clean

Comments:

6-501.12 - Core: Cleaning, Frequency and Restrictions Addl Notes: Observed a build-up of grease on the vent above the stove and the equipment housed inside the vent. Informed PIC that these need to be cleaned. Discussed the hazards of grease build up with PIC. Observed a build-up of food debris on the plastic flaps of the walk-in. Discussed with PIC that the physical facilities need to be cleaned and continue to be cleaned at a rate which prevents the accumulation of food debris. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

"A" for Food Safety

Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.

How does it work?

The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.

How can I determine the grade?

The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.

Definitions

Priority Violation
Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
Priority Foundation Violation
Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
Core Violation
Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
Cutting Edge Program
All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
