A clean rack of dishes observed inside of the machine and employee observed to be doing dishes during the inspection. Verified the concentration with person in charge's (PIC) test strips. According to PIC, the machine was recently serviced and the chlorine concentration should be tested daily (not tested or log filled out since 10/19/2023). After priming the machine the concentration tested at 50 ppm. PIC will have recently washed dishes rewashed, rinsed, and sanitized. Discussed verifying that the chlorine concentration is between 50-100 ppm daily by checking the log and testing, prior to use. Chlorine concentration must be at 50-100 ppm to effectively sanitize dishes and destroy pathogens. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation.

3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. >>> Observed sour cream, milk, cream cheese, cottage cheese, and salsa with cut tomatoes cold holding in the 2-door reach-in with internal temperatures of 46-49F, probe thermometer, verified by PIC. The TCS foods were placed into the reach-in more than 4 hours ago and the unit observed not to be maintaining 41F or less. PIC discarded the TCS foods. Discussed monitoring the temperatures of TCS foods to ensure that cold food is held at 41F or below. Temperature is an important factor in limiting pathogen growth. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. After discussion with the person in charge, it has been determined that the root cause of the violation was a verification breakdown, which resulted in the violation.

A pattern of non-compliance for Priority violation #20, Priority Violation - 3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding has been noted during this inspection. An Active Managerial Control Intervention Visit was scheduled with the person in charge at 11:00 am on Thursday November 2nd 2023. Failure to correct repeat violations may result in legal action.
