7-204.11, P: Sanitizers, Criteria-Chemicals ----- Observed two quat sanitizer wiping cloths buckets with a concentration of 500ppm. Quat test strips were available and easily accessible. Quat sanitizer solution must have a concentration of 200-400ppm. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. PIC determined that the sanitizer dispenser was dispensing a higher than normal concentration of sanitizer and submitted a work order to get the dispenser fixed. In the mean time, the establishment will be manually making the sanitizer solution and using test strips to confirm the 200-400ppm sanitizer level. PIC re-made the two sanitizer buckets with a correct concentration of quat sanitizer.

Core-4-501.13, C: Microwave Ovens ------ Observed food residue and build-up inside all three microwaves facing the grill line. Food contact surfaces of cooking or reheating equipment shall be kept free of encrusted food deposits and other soil accumulations. Food contact surfaces shall be clean to sight and touch. PIC assigned an employee to clean the microwave at time of inspection. Advised PIC to clean equipment after use or at a frequency that precludes build-up of encrusted food deposits.

5-402.11, P: Backflow Prevention ------ Observed a direct connection between the drain line from the dishwasher and the floor drain which is plumbed directly to the sewer system. There must be an indirect waste connection to prevent sewage,gas, or bacteria to flow back into the dishwasher. There must be an air gap between the floor drain and the drain line from the dishwasher. In addition, the food code requires a pex or pvc drain line instead of the flexible hose. PIC put in a work order to get the dishwasher drain system fixed. A re-inspection is scheduled for Monday Aug 2nd.
