Dishwasher washed hands for 20 seconds at the time of inspection before continuing to put away clean dishes. This is the 2nd consecutive violation. Repeat violation.

Core-4-101.11 (B-E), C: Characteristics-Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable-- At time of inspection, observed establishment re-using plastic tubs, that once stored cottage cheese and sour cream, as hot holding containers in steam table. All items were removed from the plastic containers at time. Discussed the importance of storing food in proper food grade containers to prevent the migration of deleterious substances.

At time of inspection, observed establishment using absorbent rags to cover cooked biscuits in hot box. Rags were observed in contact with food. PIC removed rags from food at time of inspection. All food contact surfaces must be durable, nonabsorbent, smooth, and easily cleanable.

The device should be installed at each water inlet connection for non-carbonated systems. Must certify and provide test certificate for testable backflow devices. Must provide ASSE 1022 Dual Check Valve at coffee brewer prior re-inspection on 4/1/2022.

These do not meet the required design standard for internal backflow devices within Maricopa County. Must provide approved 1055A internal backflow devices at chemical dispensers prior to re-inspection on 4/1/2022.
