Had manager move the dirty items to the 3-compartment sink to be thoroughly washed, rinsed and sanitized. Discussed that all utensils and dishes should be stored cleaned to the sight and touch to help prevent foodborne illness.

For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4125/Food-SafetyOperator-Resources. ------ In the salad prep cooler, observed cut tomatoes with internal temperatures at 51*F when measured with a probe thermometer. On the line, observed sliced tomatoes and leaf lettuce with internal temperatures at 56*F. PIC stated all foods were on time as a control but no marked timestamp was observed. PIC stated the foods had been on time control from less than 2 hours had a timestamp for 12:00pm placed on all foods at the time of inspection. Discussed that when time as a control is used, foods must be used or discarded within 4 hours and cannot be cooled down, reheated or otherwise repurposed.

PRIORITY VIOLATION-7-201.11, P: Separation-Storage ------ Observed two chemical spray bottles stored on the metal bar above the 3 comp sink in direct contact with pairs of cleaned tongs. Discussed storing all chemicals separately where they pose no risk of contaminating food or food contact surfaces. The PIC moved the spray bottles to another area at the time of inspection.

Comments:
Priority Foundation-3-501.15 (A), Pf: Cooling Methods. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ------ Observed a plastic covered container of cooling pasta noodles in the salad prep cooler on the line with internal temperatures ranging from 67-80*F when measured with a probe thermometer. PIC stated the noodles were cooked 1 hour prior and placed in the cooler. Ensure cooling from 135*F to 70*F is done in no more than two hours, and to 41*F or below in no more than four more hours. Cool most efficiently in shallow, uncovered pans in walk-ins, reach-ins or freezers. Advised PIC prep coolers are designed to hold previously cooled TCS foods and cooling should instead be performed in the walk in cooler. PIC removed the cooling pasta to be placed uncovered on a sheet pan in the walk in cooler at the time of inspection.

Core-6-202.15, C: Outer Openings, Protected ------ Observed the drive through automatic sliding door with air curtains but the air curtains were not turned on. PIC was unable to turn the air curtains on at time of inspection. PIC was advised that air curtains are required for protection against insect entry and to have them on for that purpose. Repair air curtains prior to the next routine inspection to ensure curtains remain on when the doors are opened.

"A" for Food Safety
Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.
How does it work?
The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.
How can I determine the grade?
The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.
Definitions
- Priority Violation
- Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
- Priority Foundation Violation
- Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
- Core Violation
- Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
- Cutting Edge Program
- All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
