Comments/Details

Equipment inspection was conducted with the contractor and owners, Rosa & Jason H. Construction is at 95% completion. The bar is about 80% completed. Coca Cola will install the soda fountain at a later date. Mister system will be installed but not now.

The kitchen is sealed from the construction zone. The establishment can stock and train in the kitchen. Owners would like to train bar tenders and servers also.
Please address the following items prior to the next inspection:
1. Provide a reduced pressure zone (RPZ) assembly (i.e. Watts LF 009) at the water connection point of the soda carbonator. Conduits and fittings after the RPZ of the soda carbonator must be PEX or stainless steel. Do not use copper or brass alloys downstream from the backflow preventer. Provide a drain cup for the device. Drainpipe must be rigid and indirectly discharge to the nearest floor sink with minimum 1” air gap from the finished floor.
2. Provide another RPZ at the glass rinsers’ water line. Provide a drain cup for the vent port of device. Route drainpipe to the nearest floor sink with minimum 1” air gap from the finished grade.
3. Provide a vented dual check valve at the water connection of the espresso machine. This is not a testable device, so replace it whenever it leaks or annually; whichever comes first.
4. Provide access panels for the backflow fixtures at the bar.
5. Certify all testable backflow preventers and provide report. Keep copies of the reports on file for inspection purpose.
6. Replace the water filter for the soda system. Last time was on 2/ 2023.
7. Provide a vented dual check valve backflow preventer (ASSE 1022) at the water connection point of the tea brewer.
8. Provide several coats of semi-gloss paint on the substrate of the countertop.
9. Seal top, sides and bottom of the butcher block with several coats of marine grade sealant.
10. Grout must be flushed with the level of the stone/ tile surface.
11. Restrooms must have urinal screens between urinals, split toilet seats, covered trash cans in women’s restroom.
12. Provide transitional strip at different level floor.
13. Provide a micro-switch operate air curtain over the delivery door.
14. Smooth out the edges of the stainless-steel cut outs over the floor sinks at the bar.
15. Walls, floor, ceiling, fixtures, equipment must be installed/ in good condition/ and finished before final approval can happen.
16. There are gaps between the hood’s baffles and missing baffles all together. Provide additional baffles for the hood.
17. Seal all gaps, cracks and penetrations throughout the facility. Any space that has the thickness of a business card must be sealed.
18. Provide 1” air gap from the flood rim for the pre-rinse sprayer at the dishwasher.
19. Provide additional lighting under the bar countertop. LED strip lights are acceptable.
20. Seal sinks to the walls.
21. Provide 3/8” radius cove base at wall and floor juncture on the wall of the expediters area.
22. Finish the topcoat on the floor in the expediters area.
23. Clean all floor sink, floor troughs, and re-finish corroded ones as needed.
24. Flush out all floor sinks / floor trough/ floor drains to ensure they are in working condition before using the facility.

All construction dusts, equipment, fixtures, counters, shelving units, small wares must be cleaned thoroughly before using the facility.

No County legal action will result from this inspection.

"A" for Food Safety

Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.

How does it work?

The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.

How can I determine the grade?

The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.

Definitions

Priority Violation
Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
Priority Foundation Violation
Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
Core Violation
Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
Cutting Edge Program
All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
