1. The food prep area in the front cooking area is behind a wall and countertop that is being remodeled and that is exposed to customers in the restaurant. Prove a sneeze guard along the remodeled countertop in front of all exposed food prep areas. The sneeze guard must be at least 60 in. high from the customer side floor. Also the wall on the inside prep area must be finished to be smooth, non-absorbent and easily cleanable. There can be no bare wood exposed, including the underside of the countertop and the space between the countertop and the supporting wall underneath must be covered and sealed. Provide a cove base finish at the floor wall junctures behind all the prep equipment in this area.

2. Provide covers for the ice bins in the bar.

1. There is no backflow prevention device installed for the patio mister system. Provide a certified, drinking water safe, RPZ backflow prevention device for the water supply to the patio mister system. Provide the test certification for this device after installation.

PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law;

1. The mop sink faucet is in disrepair. The hot water valve is very difficult to turn on and the cap for the atmospheric vacuum breaker is from another plumbing fixture. Repair the mop sink faucet to be fully functional and ensure that the atmospheric vacuum breaker is installed and fully functional.

2. There is a drain board next to the dishwasher in the bar with a drain pipe that empties onto the shelf below the drain board. Provide a drain pipe that empties to the nearby floor sink with a minimum 1 in. air-gap for this drain board. This waste drain pipe must not connect to any other drain pipes before emptying into the floor sink.

3. The ice bin in the bar adjacent to the dishwasher is being held up with a bare block of wood. Provide a proper metal support for this ice bin that is smooth, non-absorbent and easily cleanable.

4. The drain pipes for the main ice machine in the kitchen extend far down into the floor sink beneath the machine. Provide minimum 1 in. air-gaps for between the ice machine drain pipes and the flood rim of the floor sink.

1. The RPZ backflow prevention device for the water supply to the soda fountain carbonators must be tested and certified. There is also a water leak onto the floor from one of the connections to this device. Repair the water leak.

This establishment has demonstrated sufficient compliance to proceed with the issuance of the permit. "A" for Food Safety

Through our grading system, Maricopa County Environmental Services Department provides at-a-glance indications of how food establishments perform during food safety inspections. This system is designed to grade food establishments in terms of food safety requirements and provide recognition to those who choose to participate.

How does it work?

The issuance of grade cards to food establishments is based on voluntary participation. The person in charge, who is present during the inspection, will be asked whether they would like to participate in the Grading System. This will be decided prior to each inspection. If an establishment does not participate in the Grading System, Not Participating or NP will appear on the inspection report, and the inspection will still occur. If an establishment does participate, a grade of A, B, C, or D will be determined at the conclusion of the inspection using the Grading System chart below. Participating establishments will then be provided with a grade card that can be posted in the establishment. The status of the establishment’s grade will also appear on the Restaurant Ratings page of the department’s website.

How can I determine the grade?

The Grading System chart can be used to determine grades earned for establishments that do not participate. Grades are determined by the number of Priority and Priority Foundation violations received at the time of inspection. Violation types are defined in general terms below.

Definitions

Priority Violation
Major violation that directly contributes to increasing the risk of foodborne illness or injury (e.g. Food employees do not properly wash hands when required).
Priority Foundation Violation
Minor violation that does not directly contribute to an increased risk of foodborne illness but failure to correct this violation may lead to the occurrence of a priority violation. For example, hand washing soap and paper towels not available at hand wash sink (may lead directly to food employees not properly washing hands when required).
Core Violation
Minor violation that relates to general maintenance and sanitation (e.g. No sign reminding employees to wash hands).
Cutting Edge Program
All county food-related establishments can partner with Maricopa County to implement a proactive approach to reducing foodborne illness risk factors by implementing food safety systems that include policies, training, and verification processes. Partners enrolled in the Cutting Edge Program receive an A+ when an A is earned.
